Comparison of Powdered Active Compounds Made from Tender Coconut Water Fortified with Vitamin E, Processed by Spray Drying and Freeze Drying

Background: Tender coconut water contains antioxidants vitamin C, amino acids, L-arginine, polyphenols, selenium, and minerals that prevent oxidative stress, anemia, inflammation. It also lowers lipid profiles, increases enzyme antioxidant status, controls peroxidation. Previous investigations have shown tender provides health benefits but is difficult to store. This due its short shelf life, which can be extended by drying obtain a dry or powdered form. A special method acquire materials maintain the characteristics of raw spray freeze drying. Objective: study aims develop into powder fortified with E differentiate active compound content processed Method: used randomized block design sample was green (Viridis variety) aged about 5-7 months from Bogor area. The procedures include purchase water, followed drying, while compounds are beneficial analyzed. Drying carried out at Seafast Center Laboratory Research Community Service Institute, Agricultural Institute (IPB), analyzed Integrated Testing Laboratory, Gadjah Mada University (UGM), Yogyakarta. Result: made were phenol, L-Arginine, L-Histidine, L-Lycine, L-Phenylalanine, L-Isoleucine, L-Leucine, L-Valine, consisting Cu (Copper), Fe (Iron), Mg (Magnesium), Zn (Zinc), Na (Sodium), K (Potassium), P (Phosphor). Conclusion: There differences in between spray-drying methods.
